2 3/4 cup flour
2 sticks of earth balance butter
2 cups of sugar
Egg replacer for 4 eggs
1 cup plain soy milk
1 tsp vanilla extract

1. Preheat oven 20 minutes
2. Beat the butter and sugar in a large mixing bowl until smooth
3. Add the egg replacer and beat
4. In about 4 batches add the flour and soy milk alternately
5. Add the vanilla, beat until smooth
6. Bake 20 minutes

Do you have a recipe for a good vegan icing? Chocolate or Vanilla? The one I found and made last weekend wasn't all that great. Ava wants a vegan cake or vegan cupcakes for her b-day in a couple weeks! Thanks! :)
