Sweet corn pudding

4 cups frozen corn kernels (19oz.), thawed
4 large eggs
1 cup whipping cream
1/2 cup whole milk
3 T. sugar
1/2 stick (1/4 cup) butter, room temperature
2 T. all purpose flour
2 t. baking powder
1 t. salt

Preparazione → 15 min

Cottura → 45 min

1. Preheat oven to 350 degrees F.

2. Butter 8x8x2 inch glass baking dish. Blend all ingredients in food processor until almost smooth. (If you want more texture puree only half the corn and keep other kernels whole). Pour batter into prepared dish. Bake "pudding" until brown and center is set, about 45 minutes. Cool 10 minutes; serve.
