Spicy wedges with turkey burgers

Ingredients

The burgers can be cooked ahead of time and frozen, simply thaw and cook until piping hot.

800g medium potatoes, cut into wedges
2tbsp oil
1tbsp Fajita seasoning mix
500g minced turkey
1 lime
2tbsp chopped coriander

1. Method

2. Preheat the oven to 200oC, gas mark 6.
Place the potatoes on a large baking tray and cover in 1tbsp oil and Fajita seasoning and bake for approx 15 minutes.
Meanwhile, mix the turkey with the lime zest and coriander. Season to taste. Shape mixture into 4 burgers. Heat the remaining oil in a frying pan and fry the burgers for 8 minutes, turning occasionally until cooked throughout.
Serve the burgers and potato wedges with the lime cut into wedges and fresh tomato salsa.
