Salmon with white wine capers sauce
Ricetta di
1 lb of Fresh Salmon
1/4 cup White Wine
1/4 cup Butter
1 jar of Capers
Lemon Juice
1/2 white or yellow onion - sliced
Minced Garlic
Salt
Ground Black Pepper
1 lag of Orzo either white or wheat
Preparazione → 10 min
Cottura → 25 min
1. Preheat oven to 400.
2. On a baking sheet line with foil and roll up on all four sides to not let juices run out. Place salmon on foil and drizzle with a tad of olive oil.
3. Spread minced garlic on top and dash with salt and pepper.
4. Sprinkle lemon juice on top. Place several slices of butter on top.
5. Bake for 20-25 minutes until flakey and cooked completely.
6. In a saucepan bring water to boil. Add salt an boil half bag of orzo for 9 minutes. Stir continuously so not to stick on bottom. Drain, rinse over with cool water, drain again to stop cooking and set aside.
7. Bring skillet to medium heat.
8. Add little drizzle of olive oil and 1/8 tablespoon of butter and saute onions. Crush black pepper on top.
9. After sauté for a couple of minutes add whole jar of capers but only half of the juice. Add white wine, 1/4 cup butter and 1 1/2 tablespoons of lemon juice and whisk until butter is melted.
10. On a plate add couple of spoonfuls of orzo and place 1/2 salmon on top. Drizzle with white wine capers sauce.
11. Make a plate for lunch with the leftovers and refrigerate.
