Pumpkin cupcakes w/ cream cheese frosting recipe
Ricetta di1 cup granulated sugar
1 cup all-purpose flour
1/3 cup vegetable oil
2 eggs
1/2 tsp vanilla extract
3/4 cup pure pumpkin puree
1 tsp pumpkin pie spice
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 for the cream cheese froasting
4 oz cream cheese at room temp.
2 Tbsp unsalted butter at room temp.
1/2 tsp vanilla extract
1 1 to 2 tbsp milk
2 cups confectioner sugar
1. 1. Preheat oven to 350*. Get a muffin tin and muffin liners.
2. 2.In a bowl, add eggs, pure pumpkin puree, vegetable oil, vanilla extract, and granulated sugar. Use a hand mixer, and blend.
3. 3. Add flour, and spices. Mix till combined. Use spatula, and mix well.
4. 4.Use ice cream scooper & fill.
5. 5.Put in oven 350*, for 20 mins. Let cool completely.
6. 6.(For frosting:)
7. 1. In a bowl add butter,cream cheese, and vanilla extract; use hand mixer, mix to combine.
8. 2.Add confectioner sugar. mix again. Add milk; mix. Put in bowl, and cover with plastic wrap: and put in fridge to use when ready.
9. 3.Take a piping bag, and take fill frosting in it.
10. 4.Frost the cupcakes.
