Parsley potatoes
Ricetta di Brooke Peterson
6 medium red or yukon gold potatoes, cut into 1 inch cubes
1/4 cup butter, cut into 4 pieces
1 to 2 tbsps minced fresh parsley (you can use dry in it's place but fresh has better flavor)
salt and pepper to taste
1. In a large saucepan, add potatoes along with enough water to cover the potatoes. Bring to a boil over medium heat. Reduce heat to simmer and cover. Cook 20 minutes or until potatoes are fork tender. Drain.
2. Add butter, parsley, salt and pepper to potatoes and stir until butter is completely melted.
