3/4 lb orzo
2 Tbsp olive oil
1 bunch of spinach, cut into bite-sized pieces
1 sweet red pepper, chopped
1/4 cup minced scallions
2 tsp capers, rinsed and drained
3 Tbsp crumbled feta
3 Tbsp toasted pine nuts

DRESSING
1/2 cup olive oil
3 Tbsp red wine vinegar
3 Tbsp lemon juice
1/2 tsp dried oregano
1/2 tsp ground pepper
1 tsp dijon mustard
1 small garlic clove, minced
pinch of thyme
1 tsp salt
1/2 tsp pepper

1. Cook orzo according to package.
While orzo is cooking, make dressing by combining remaining olive oil and other ingredients in a small bowl.
When orzo is done, run under cold water and drain.
Toss with 2 Tbsp olive oil.
Toss orzo with spinach, red pepper, scallions, and capers and dressing.
When ready to serve, add feta cheese and pine nuts.

2. Salad can be made the night before. Add dressing, feta and pine nuts when serving.
