Olive herby bread
Ricetta di
1 llb Strong plain flour
1/2 llb Wholemeal flour
1/2 a jar of Olives plus the liquid
1 small onion
2 teaspoons Mixed herbs
1Teaspoon salt
1 heaped teaspoon sugar
1 sachette yeast
1 pint or so water
Preparazione → 110 min
Cottura → 40 min
1. Phase 1
Finely chop the onion,chop olives and herbs,
Mix flour, yeast and sugar in a bowl, add the herbs ,onion ,olives with their liquid and stir, heat water to tepid or blood temperature and stir in.
Kneed until the dough becomes elastic,
Cover and leave in a warm place until doubled in size,(usually an hour plus)
Cut the dough in 2 pieces , knead again for 5 mins.
Phase 2
Put each half in a bread tin make three cuts on the top of the dough leave in a warm place to rise,
when doubled in size place in a preheated hot oven for 25 minutes then turn the oven down to medium and bake for a further 15 minutes..
The bread is ready when it sounds hollow when you tap the bottom.
2. These days I chuck everything into the breadmaker and let it make the dough as in phase 1
