Mini blueberry pies recipe
Ricetta di(For the crust:)
2 1/2 cups all-purpose flour
1/4 cup granulated sugar
1 1/2 tsp lemon zest
1/4 tsp salt
1 tsp vanilla extract
1 1/2 tsp baking powder
3/4 cup unsalted butter, COLD, and cut into bite size peices
1/4 cup vegatable shortening, COLD, and cut into bite size pieces
3 egg yolks
1 A few tablespoons of Ice water in Measuring cup
(for the filling:)
1 cup blueberries
1/4 cup granulated sugar
2 1/4 Tbsp corn starch
1/2 lemon zest
1/8 tsp salt
2 tsp lemon juice
Preparazione → 15 min
Cottura → 25 min
1. 1. In a bowl, put dry Ingredients in, and mix together.
2. 2. In the bowl, add vanilla extract and baking powder, zest of Lemon. mix.
3. 3. Put everything in mixer bowl. Add cold butters: mix till everything is combined.
4. 4. Add egg yolks. When egg yolks are mixed together, start adding Ice Water till comes together.(Ice water little at a time)
5. 5.When dough is done, put on table and divide dough in half, and wrap each piece in plastic wrap. And put in fridge to rest for a hour:
6. 6.To make filling: Put blueberries in a bowl. Put sugar in bowl over berries. Add corn starch: Add lemon zest, and juice of lemon. Mix everything together: set aside.
7. 7.Take pie crust out when done, and sprinkle some flour on the table: Put dough on table, and roll out with rolling pin. Take a muffin tin pan, and spray with non-stick spray.
8. 8.Keep moving dough and rotating it. Roll till rectangle size.
9. 9.Take your biscuit cutter and star shaped cutter: Cut out two circles with biscuit cutter: One for top, and bottom.
10. 10.Put bottom circle inside muffin tin. Add a small spoonful of blueberry mixture. For the top circles, take your star cutter and put in middle of circle.
11. 11.Take your egg wash ( egg and water), brush the bottom circle on tin and put top circles on it and seal.
12. 12. Brush the tops with egg wash.
13. 13. Put in oven 375* for 20 mins till golden brown.
