Marinated chicken with a sweet mango dip sw
Ricetta diIngredients
- 142gm (5oz) very low fat natural yoghurt
- 1tsp tomato puree (negligible Syns)
- 2tsp medium curry powder
- 1/2tsp garlic granules
- 1tsp dried coriander leaf
- 454gm (1lb) boneless, skinless chicken breast, cubed
For the dip
- 142gm (5oz) very low fat natural yoghurt
- 2tbsp mango chutney (4 Syns)
- ½tsp dried coriander leaf
1. Method
1. Blend the yoghurt with the tomato puree and spices. Stir in the chicken pieces. Cover and allow to marinate for one hour in the refrigerator.
2. Thread the chicken onto 8 satay sticks or 4 skewers and place under a pre-heated grill for 15-20 minutes, turning occasionally. If using the barbeque, cook over the coals on a rack for 20 minutes, turning the skewers occasionally.
3. Mix the dip ingredients together and serve with the kebabs.
Note: Always soak wooden skewers in water before you thread the meat on, to prevent the wood from burning when the meat is cooking.
