Loaded cauliflower casserole

2 lbs cauliflower florets
8 oz shredded sharp cheddar cheese (to divide)
8 oz shredded Monterrey Jack cheese (to divide)
8 oz block of cream cheese, softened
4 T. heavy cream
2 bunches green onions, sliced (1-1/2 cups)
6 slices bacon, cooked crisp and crumbled
1 clove garlic, grated
Salt & pepper to taste

Preparazione → 20 min

Cottura → 35 min

1. Preheat oven to 350 degrees
Steam cauliflower florets until tender (5-10 min)
Cream together 6 oz each of shredded cheddar and jack cheeses, 8 oz cream cheese and heavy cream
Stir in sliced green onions, chopped bacon and garlic
Set aside
Drain any liquid from steamed cauliflower and save to add to cheese mixture, if needed
Stir cauliflower and cheese mixture together
Add seasoning if needed
For finer texture mash with masher a few times
Pour into a 2-3 quart casserole dish and sprinkle the remaining cheeses on top
Cover dish with lid or foil and bake for 25 minutes
Remove cover and continue to bake until cheese is brown and bubbly.

2. Comments for DFW group
I used bacon bits instead of bacon to make it vegetarian
I added too much liquid and had to spoon some out so it wasn't soupy
I had to turn the oven to broil to get it to brown on top
