Fried curried eggplant with yellow bean sauce - pad pet makua tow jiew
Ricetta di
2 Tbs vegetable oil or more
2 garlic cloves, finely chopped
1 Tbs green curry paste (Thai)
15 green small eggplants
6 Tbs vegetable stock
10 small sweet peppers
1 Tbs yellow bean sauce
1 Tbs sugar
20 Thai basil leaves
Preparazione → 5 min
Cottura → 10 min
1. 1. Slice eggplants into 1/4 -1/2 inch slices.
2. 2. Chop peppers into a small dice.
3. 3. In a wok or frying pan, heat the oil and fry the garlic until golden brown.
4. 4. Add the eggplant slices and stir-fry for 5 minutes.
5. 5. Pour out excess oil.
6. 6. Stir in the stock and add all the remaining ingredients except the basil.
7. 7. Simmer for 5 minutes. Stir in the basil leaves and serve at once.
