Creamy artichoke soup

2 Tbsp olive oil
2 Tbsp grassfed butter
1/2 large onion chopped
3 medium carrots diced
2 stalks celery diced
1 large sweet potato peeled and diced
2 cloves garlic, whole
1 red bell pepper, diced
1 Tbsp vegetable paste
1 12 ounce jar marinated and quartered artichoke hearts
24 ounces water
1/2 - 1 cup almond milk

Preparazione → 10 minutes min

1. In a 6 quart pot heat oil and butter. Add the next 7 ingredients. Saute until fork tender. Add the artichoke hearts with the liquid and the water then cook for 5 minutes. Turn off the heat. Blend with an immersion blender. Regulate the thickness of the soup with the almond milk and more water if needed. Season to taste.
