Chocolate chip and macadamia cookies

125 g unsalted butter
1 cup brown sugar
1 whole egg
2/3 cup self-rising flour
2/3 cup plain flour
1/2 cup cocoa powder
1 cup chocolate chips
1 cup macadamia nuts

1. Take a baking paper and line two cookie trays with the paper. Preheat the oven to 160 degrees Celsius.
2. In a saucepan, melt the unsalted butter and let it cool down a bit before transferring it to a mixing bowl. In the mixing bowl, first add brown sugar and mix. Add in the egg second and mix it well until combined completely.
3. Sift in plain flour, self-rising flour and cocoa powder and mix well. If the mixture is too wet and runny, add in equal portions of flour.
4. Roughly chop the macadamia nuts. Add the chopped nuts and chocolate chips to the bowl and mix until combined.
5. Scoop spoonfuls of the cookie mixture onto the baking trays and bake in the oven for 12-15 minutes. After 15 minutes, remove the trays from the oven and let it cool for a while before transferring the cookies to the wire rack.
6. Leave some macadamia nuts whole in the mixture for an extra crunch. Eat warm when they’re still soft and gooey inside with a nice glass of milk.
