Black bean-corn salsa

1/2 cup cooked or canned, drained black beans
1/2 cup roasted corn kernels
2 tbsp diced red onions
1/2 tbsp finely diced jalapenos
2 tbsp fresh lime juice
2 tbsp chopped fresh basil leaves
2 tbsp olive oil
Salt & pepper to taste

Preparazione → 30 min

1. Combine in bowl and mix well. Maybe made up to one day ahead of time, covered and refrigerated. Bring to room temp before serving. Serve with meats and fish lightly brushed with olive oil and grilled.
To roast corn, remove silk from ear of corn but keep husk; dip ear in water to moisten, roast in 350 degree oven for 45 minutes.
