Beef short rib in stout with harvest veggies
Ricetta di
15ml oil
1.5kg beef short rib
1 carrot, peeled and chopped
1 parsnip, peeled and chopped
1 butternut, peeled and chopped
1 onion, peeled and chopped
15ml tomato paste
2 garlic cloves, crushed
4 cinnamon sticks
zest and juice of 1 orange
30ml cake flour
salt and freshly ground black pepper, to taste
2x375ml milk stout beer
30ml dark brown sugar
750ml beef stock
Preparazione → 20 min
Cottura → 120-200 min
1. Heat oil and seal meat in deep ovenproof dish
2. remove meat and set aside
3. in same dish, add carrot, parsnip, butternut and onion
4. cook over medium heat until soft
5. add tomato paste, garlic, cinnamon, orange zest, flour and season
6. add stout, orange juice, sugar and stock, then stir well until sauce forms
7. add meat again and cover and cook on low heat till meat is tender (2-3 hours)
8. Skim fat and thicken sauce with a little extra flour if necessary
