Superfood salad

1 bunch asparagus
1 punnet baby mushrooms
1 red pepper
1 yellow pepper
Handfull baby plum tomatoes
Mixed leaf salad
Shredded cooked chicken (optional)
Goats cheese chunks
Salt and fresh ground pepper to taste
Olive oil
Crushed garlic 2 cloves
Parsley
Oregano
Chives
Bioglan chia and flax seeds

1. I was given a free sample if bioglan chia + flaxseeds by the tesco orchard programme so was excited to try them out and am glad to say they added a lovely crunch and texture to this warm salad, enjoy!
First deseed and cut the peppers into square chunks and place on a baking tray with the baby plum tomatoes, drizzle with olive oil and sprinkle with salt, pepper and oregano then bake in a preheated oven at 180° for 20minutes. Next wash the mushrooms and heat a pan up pour in some olive oil and sauté the crushed garlic before adding mushrooms, salt, pepper, parsley and chives, cook for 10mins, then prepare the asparagus by snapping the woody stalks off then chargrilling in a dry pan (you can skip these steps and pop all the veg in the oven together to cook to save time but I like them seperately) put the mixed leaves in a large bowl with the shredded cooked chicken if using add all the cooked vegetables leaving mushrooms and their oil to last then toss together, sprinkle liberally with bioglan chia and flax seeds and serve!
