* 1 medium onion cut into quarters
* 1 medium onion roughly chopped
* ¼ tsp turmeric
* large piece ginger peeled and roughly chopped
* 4 garlic cloves
* 2 tbsp vegetable oil
* 2 tsp black mustard seed
* 5 fresh curry leaves
* 1 tbsp mild curry powder
* 400g can coconut milk
* 4 cloves
* 1 cinnamon stick
* 1 whole dried red chilli although I normally use fresh
* 300g runner beans stringed and sliced
* juice of 1 lime
* 1 tsp garam masala
* handful fresh coriander

T. Preparacion → 20 min

T. Cocinado → 30 min

1. 1. Place the onion cut into quarters, turmeric, ginger, garlic and 1 tbsp of the oil together with a large pinch of salt in a blender and blitz into a paste
2. Heat the remaining oil in a shallow pan, when hot add the mustard seeds and curry leaves,
3. Cook until they crackle,
4. Add the onion paste and cook until sticky
5. Stir through the curry powder and garam masala cook to release the oils
6. Pour in the coconut milk and stir
7. Add the cloves, cinnamon and the chilli, and bring to a simmer.
8. Tip in the beans and chopped onions
9. Simmer for 15 mins or until the beans are tender.

11. Take the pan off the heat and stir through the coriander.
Serve with rice and rotis, if you like.
