Sambal (malaysian sambal sauce for accompaniment or cooking ingredient)

150g fresh red chilli's finely chopped
Full bulb garlic crushed
1/2 cup water
1/2 cup rice vinegar
1.5 tsp Kashmiri Mirch or paprika
1tbsp oil
1/2 tsp sugar
1/2 inch grated ginger
1 tsp lemongrass paste
T. Preparacion → 10 min
T. Cocinado → 10 min
1. Heat the oil in a wok
2. Add the garlic and warm through - do not brown
3. Add the chilli and fry for a minute or two, then add the sugar, Mirch, ginger and lemongrass
4. Add 1/4 cup water/vinegar and fry until gone, repeat with the water/vinegar until it is gone
5. Store in an airtight container in the fridge
