Roasted holiday fennel

4 large fennel bulbs, sliced into 1 inch horizontal pieces (fronds reserved)
1 clove garlic, sliced
olive oil
salt & pepper
1-2 tsp orange zest
pomegranate arils
T. Preparacion → 5 min
T. Cocinado → 45 min
1. Preheat your oven to 400 degrees.
2. Rub a large baking dish with olive oil and place the fennel inside. Top with the garlic, salt, pepper, and zest. Drizzle with more olive oil.
3. Roast for 45-50 minutes until caramelized and browned. Top with fennel fronds and arils and serve immediately.
