Mussels with cider, leeks and pancetta

Ingredientes para 3 to 4
1tbsp olive oil
300g leeks, sliced
140g cubed pancetta
2tbsp flat leaf parsley
Knob butter
2 garlic cloves chopped
500g medium dry cider
2kg mussels
100g cream
Instrucciones
1. Heat the olive oil and butter in a large pan.
2. Add the leeks and cook gently for 10 mins
3. Add the pancetta and garlic and fry for another 5 mins.
4. Add the cider, bring to the boil and simmer for 5 mins.
5. Add the mussels and simmer fr 5 mins with the lid on until they have opened. Discard any that fail to open.
6. Stir in the cream with the parsley and serve with lots of crusty bread r skinny fries.
