Lemony tofu salad sandwich

For the dressing
4 tablespoons vegan mayonnaise, like Vegenaise
2 tablespoons mustard
2 tablespoons red wine vinegar
1 tablespoon olive oil
1/2 teaspoon turmeric
1/2 teaspoon lemon zest
For the salad
20-ounce extra-firm tofu (or 12-16oz tofu + 8 hard boiled eggs)
~1/2 cup slivered almonds
~1/2 cup golden raisins
~1/4 cup chopped chives
Salt and pepper to taste
T. Preparacion → 20 min

1. Mix everything together in a bowl! So easy!
