Jen's curried veggie burgers
Receta por4 tbsp olive oil
1 onion, chopped
1 clove garlic, crushed
2 courgettes, grated
1 carrot, grated
4 slices bread, no crusts
400g can chickpeas, rinsed
1 tbsp mild curry paste
2 tbsp smooth peanut butter
1 egg yolk
handful of coriander leaves, chopped
T. Preparacion → 15 min
T. Cocinado → 5 min
1. Heat half the oil and pan fry the onion until soft.
2. Add the garlic and the grated courgette and carrot, until softened.
3. Put the bread, chickpeas, softened vegetables, curry paste, peanut butter, egg yolk and coriander into a food processor and process until the mixture comes together.
4. Take the mixture and mould into burgers with your hands.
5. Heat the remaining oil and pan fry the burgers for 1 - 2 minutes on each side
6. Serve on bread rolls, with salad.
