Homemade vegetable stock recipe
Receta por2 yellow onions, quarted but not peeled
4 carrots, roughly chopped but not peeled
4 stalks of celery, roughly chopped
2 tomatoes, halved
6 cloves of garlic, not peeled and left whole
2 Tbsp olive oil
1 small handful of parsley
1 few peppercorns
1 healthy pinch of salt
1 small dry bay leaf
1. 1. On a baking sheet, add all the veggies.
2. 2. Preheat oven to 425*.
3. 3.Drizzle olive oil over it, and add salt. Toss together.
4. 4.Put in oven for 25 mins.
5. 5. In a soup pot with water, add dry bay leaf, peppercorns, parsely.
6. 6.Add roasted veggies in soup pot.
7. 7.Put on stove top, simmer low for 5 to 6 hours. Then let cool and strain it. Put in fridge
