455g (16oz) castar sugar
455g (16oz) unsalted butter or margarine
8 free range eggs
115g (4oz) good quality cocoa powder
455g (16oz) self-raising flour
225g (8oz) ground almonds
2 tbsp strong coffee
2 tbsp sherry

T. Preparacion → 10-15 min

T. Cocinado → 60-70 min

1. Preheat the oven to gas mark 4, 350 F and grease and line the tins.

2. Cream together the butter and sugar until well combined. Mix the eggs together and beat into the sugar and butter and add the dry ingredients. Add the coffee and sherry.

3. Pour into the prepared baking tins, not to deep. Bake for 1 hour (more if large or thick). Take out of the oven when springy to the touch or a skewer comes out clean.

4. Leave to cool then either fill with buttercream or ice with glace icing, or serve with cream or custard as a dessert.
