Diet Recipe of Apple Muffins with Cinnamon-Pecan Streusel de Idietitian Pro - Recipefy

1 2/3 cups Almond Meal Flour
6 1/2 tsps Cinnamon
1/3 tsp Salt
2 tbsps Organic High Fiber Coconut Flour
1/2 cup, half Pecans
1/4 cup Coconut Milk Unsweetened
2 large Eggs (Whole)
8 tbsps Erythritol Powder
1/16 pinch Stevia
2 tablespoons Unsalted Butter Stick
2 tsps Vanilla Extract
2/3 cup, quartered or chopped Apple
1 tsp Baking Powder (Straight Phosphate, Double Acting)
Mixed Dry Fruits (for topping)

T. Preparacion → 15 min

T. Cocinado → 25 min

1. First Preheat Your Microwave at 350 degree F. and ready a Muffin Tray with eight cupcake papers.

2. Add chopped pecans,2 tablespoons granular sugar substitute (eryhtritol),1/8 teaspoon salt, 2/3 cup almond flour, 2 tablespoons melted butter and a pinch of stevia. Now mix them well with the use of fork until it begins to crumble. Keep them aside now.

3. Now prepare the Muffins Batter: mix all the eggs and whisk 2 teaspoons vanilla, a pinch of stevia,6 tablespoons granular sugar substitute (erythritol), 1/4 cup coconut milk and 1/2 teaspoon ground cinnamon. Now add 1/4 teaspoon salt, 1 cup almond flour,2 tablespoons coconut flour and 1 teaspoon baking powder. Mix them well. Now fold in 2/3 cup of chopped apples.

4. Now divide this batter in to 8 parts in to the muffin tray and top them with some dry-fruits.

5. Now start baking for about 25 minutes. After baking remove from the oven and keep aside for 20 minutes to cool. You can eat them instantly or stored them in a air-tight container in the refrigerator only up to 1 week.
