Courgettes with mushrooms in a yoghurt sauce sw

- Fry Light
- 1 medium onion, roughly chopped
- 1tsp ground coriander
- 1tsp ground cumin
- 1tsp salt
- ½ tsp chilli powder
- 227gm (8oz) mushrooms, sliced
- 2 medium courgettes, sliced
- 3tbsp natural very low fat yoghurt
- 1tbsp chopped fresh coriander, to garnish (optional)
1. Method
1. Heat a heavy-based pan sprayed with Fry Light and fry the onion until golden brown. Lower the heat to medium, add the ground coriander, cumin, salt and chilli powder and stir together well.
2. Once the onion and the spices are well blended, add the mushrooms and courgettes and stir-fry gently for about 5 minutes until soft. If the mixture is too dry, just add a little water to loosen.
3. Finally add the yoghurt and mix well into the vegetables.
4. Garnish with chopped fresh coriander, if wished, and serve immediately.
