Courgette and parmesan pasta (slimming eats recipe)
Receta porIngredients
150g of whole wheat spaghetti or linguine
1 large zucchini (courgette)
2 cloves of garlic crushed
2 teaspoons of low fat spread (2 syns)
few fresh basil leaves finely chopped
60ml of chicken stock
56g of parmesan cheese (2 HEa’s)
salt and black pepper
1. Method
2. Place the pasta in a saucepan of boiling hot water, until tender and drain.
Shave the courgette with a peeler, to get long strips
Melt the low fat spread in a frying pan and add the garlic and cook for approx 1 minute.
Add the courgette and chicken stock and cook for a further 2 minutes until stock has almost reduced. Add to the drained pasta along with the parmesan cheese and mix well.
Season with salt and pepper and divide among two plates.
Top with fresh chopped basil and serve.
