Clarke's Tavern Meatballs de Zachary Moore - Recipefy

2 medium onions – finely chopped and sautéed
4-8 cloves garlic - finely chopped and sautéed
1 cup Parmesan cheese – shredded
2 Idaho potatoes – shredded and squeezed
1-cup Panko breadcrumbs soaked in milk
3 lbs. ground turkey 85% lean
2 lb. ground pork
4 eggs – scrambled
1 tbsp. oregano
1 tbsp. parsley – fresh if available
1 tsps. Nutmeg
1 tbsp. crushed red pepper
½ tsps. garlic power
½ tsps. onion powder
salt
pepper

T. Preparacion → 30 min

T. Cocinado → 40 min

1. Prepare 2 baking sheets by covering with each with foil and each with a layer of parchment paper

2. Turn on the oven and set it to 350 degrees

3. Sauté onions and garlic together and set aside.

4. Shred Parmesan cheese and potatoes into separate bowls. When adding potatoes squeeze out as much water as possible.

5. Place breadcrumbs into a bowl and cover with milk.

6. Place turkey and pork into a large mixing bowl.

7. Scramble eggs and pour over meat.

8. Add herbs and spices.

9. Add sautéed onions, garlic, cheese, squeezed potatoes, and breadcrumbs into mixing bowl and mix by hand.

10. Form into balls and place on baking sheets. Use a small ball shaper to quickly make several at one time placing them all on the sheet before rolling them out.

11. After several are made, then one at a time, form each into round balls in the palms of your hands.

12. Bake for 30-40 minutes until golden brown.

13. Let set until room temperature.

14. Place balls in freezer for 4 hours. Then place them into freezer storage bags for later use.
