Cheater pho (asian noodle soup)
Receta por
8 oz dried rice noodles
olive oil
cooked chicken or pork tenderloin, or BBQ pork, or prawns etc etc
salt and pepper
3 cloves minced garlic
1 tbsp grated ginger
6 cups chicken stock
2 tbsp hoisin sauce
1 tbsp fish sauce
splash of sesame oil
small shake of chili flakes (or any spice you want)
carrots
sliced white mushrooms
bok choy, or celery, or spinach
Garnish
Couple of sliced green onions
2 cups bean sprouts
1/2 cup fresh chopped cilantro ( I use more_)

1. In a large pot of water, cook rice noodles according to package; drain well and coat with a little olive oil so they do not stick together and divide into bowls.
2. Put some olive oil into a large pot. Heat and add garlic and ginger and stir for 1 min.
3. Add chicken stock, hoisin sauce, fish sauce, sesame oil, carrots, mushrooms, bok choy or anything else you want. Bring to a boil; reduce heat and simmer for 10 mins.
4. Place cooked protein, bean sprouts, cilantro, green onions on top of noodles and ladle broth on top.
5. Also I would make extra broth and keep in fridge for lunches but do not keep broth with noodles in it as they will get mushy. So make fresh noodles every time.
6. Yummy!!
