Carrot cake

2 cups flour
1 1/2 cups sugar
1/2 cup packed brown sugar
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1 cup vegetable oil or butter
4 eggs
4 carrots, shredded
1 cup chopped pecans or walnuts
2 tsp. vanilla
FROSTING
2 8oz. bars cream cheese, softened
1/2 cup butter, softened
1 tsp. vanilla
2 cups powdered sugar
T. Preparacion → 15 minutes min
T. Cocinado → 35 minutes min
1. Preheat oven to 350 degrees.
In the bowl of a mixer, combine sugars, eggs, oil or butter, vanilla, and mix until well combined, about 1 minute on medium high.
Sift in flour, salt, baking powder, baking soda, and cinnamon.
Mix on medium for 20 seconds.
Fold in carrots and nuts.
Pour into two 9 inch cake pans that have been greased and floured.
Bake for 30-40 minutes until toothpick comes out clean.
Cool in pans for 30 minutes then remove to wire rack to continue cooling.
FROSTING
Combine all ingredients in the bowl of a mixer and mix until smooth and well combined.
Frost the cake.
