Bengali Egg Curry/Egg Kalia de Kitchen Snippets - Recipefy

Hard Boiled Egg : 3-4
Onion : 2 medium.Cut into long thin slices
Ginger : 1"piece
Garlic : 3 cloves
Green chilli : 1 or 2
Tomato : 1(medium) chopped
Turmeric Powder : 2 tsp.
Red chilli powder : 2 tsp.
Salt to taste
Sugar : 1 tsp.
Oil : 2 tblsp.
Ghee : 1 tblsp.
Whole garam masala : 2 cardamoms, 4 cloves and 2(1") sticks of cinnamon
Garam Masala powder : 1/2 tspn
Fresh coriander leaves : to garnish

1. Make some cuts along the eggs and marinate them with little salt,turmeric powder and chilli powder.Keep aside for 10-15 mints.

2. Finely crush ginger,garlic and green chillies.

3. Heat oil in a pan , add 2 tblpsn oil and shallow fry the marinated eggs till all the sides changes colour to light golden brown.Remove from fire and keep aside.

4. In the same pan add the whole masala and when they starts to splutter ,lower the flame and add sugar.Stir well till the sugar dissolves
Then add the onion slices and saute till they turn golden brown.
Add crushed ginger-garlic-green chillies and saute for another mint.
Then add the chopped tomatoes and saute till the tomatoes become soft and oil starts to come out of the spice mixture.
Add turmeric powder and red chilli powder ,mix well.

5. Add the fried eggs to the gravy mix well.sprinkle enough salt,add 1/2 cup water and cook for 5-10 mints
When the gravy thickens add the garam masala powder,mix well .cover and cook for another 2-3 mints.Remove from fire.

6. Garnish with coriander leaves and serve hot with rice /roti
