Baked pork chops with apples and onions

6 Rib Pork Chops, one inch thick
1 1/2 Teaspoons Salt
1 1/2 Teaspoons Sage
1/4 Teaspoon Pepper
1 Lb Carrots
2 Cups Onions, sliced
1 Lb Tart Apples, pared and quartered
1/4 Cups Brown Sugar

1. Wipe chops with paper towel and trim fat.
On wax paper combine sage, salt, and pepper.
Dip both sides in seasoning.
Slice carrots diagonally in half inch slices.
Layer in a three quart baking dish.
Top with half of the onions and layer chops so they are slightly overlapping.
Sprinkle with remaining seasonings.
Cover chops with remaining onions.
Arrange apple quarters on top and sprinkle liberally with brown sugar.
Cover and bake for two and a half hours.
Remove cover and baste with pan juices.
Bake 30 minutes longer until tender.
Let stand for five minutes, and skim fat if any.
