1 lb apples
¾ oz. powered gelatine
6 oz. sugar
1 lemon
3 eggs whites

T. Preparacion → 10 min

T. Cocinado → 20 min

1. Peel, slice and core the apples
Put them in a saucepan to stew with the sugar
Add gelatine to 3 oz of hot water with rind from lemon
Add juice from half the lemon
Whip eggs whites to very stiffly and fold into apples
Put into a mould leave to set in a cold place
Then turn out
