Weekday leek and bacon with pasta supper

2 large leeks, washed and sliced into 2" pieces
250g bacon bits
1 medium onion, peeled and roughly chopped
1 dollop french mustard
1 tbsp balsamic vinegar
1 glass white wine
1 tbsp olive oil
250g pasta twists or shells

Prep. Time → 5 min

Cook Time → 15 min

1. Put a large pan of water on for the pasta. Heat the oil in a large frying pan or skillet.

2. Fry the bacon and onion steadily until soft and starting to colour.

3. Add the leeks and stir for a minute or so. Add the mustard and vinegar. Add pepper if needed, depending on mustard and oil used. Stir, cover pan and allow to cook on a very low heat.

4. Cook the pasta in boiling salted water until just cooked. Drain pasta and add to the contents of the skillet. Mix gently before serving.

5. Serve with a crisp salad.
