Wakadoo bacon flan
Recipe by
The Pastry,
6 oz Strong Plain Flour
1 1/2 oz Beef Dripping
1 1/2 oz Margarine
1/4 teaspoon salt
water to bind about 1/4 cup
The Filing
6 oz of Bacon pieces smoked or unsmoked your preference (i use cooking bacon)
1 Medium onion
4 oz Mature Cheddar
6 cherry tomatoes
4 large eggs
1/2 a pint of milk
salt to taste this will depend on the bacon
A good grating of pepper
Prep. Time → 20 min
Cook Time → 40 min
1. Firstly make the pastry, place the flour and salt in a bowl rub in the fats , bind to a firm dough with the water, leave to rest for 5/10 minutes then roll out thinly to cover a round 8 inch x 1 inch deep ovenproof dish.
2. The filling
Chop the bacon and onion into small chunks and fry untill soft leave to cool then place over pastry .
Grate half the cheese over the filling, halve the cherry tomatoes and evenly distribute around the dish.
place the eggs ,milk salt and pepper in a bowl and lightly whisk, then pour into the flan dish,
Grate the rest of the cheese over the top.
place in a preheated medium oven for 30 to 40 minutes , turn the oven down if browning to quickly.
you can check by placing a fork in the centre if the flan has set.leave for 15 minutes to cool, slice and serve, can be eaten hot or cold
