Vegan blueberry cheesecake

Crust
· (1) 15 oz. bag of Granola of choice (I used a mix of Asana Foods Almond/Coconut & Cranberry/Ginger/Nutmeg)
· ⅓ cup coconut oil
Vegan Cheesecake Filling
· 1 ½ cup soaked raw cashews (3 hrs)
· ⅓ cup pure maple syrup
· ⅓ cup coconut oil
· ½ cup each blueberries/blackberries
· 1 tablespoons vanilla extract
· Juice from one lemon
1. Method
2. 1. Soak cashews for 3 hours
3. 2. Make crust: Give it a whirl in your blender. spread and press firmly down in an 8X8 pan covered in parchment paper.
4. 3. Make filling: Blend it all up until smooth. pour cheesecake mix over crust place in the freezer.
