Veg chilli
Recipe by1 onion chopped
2 carrots chopped small
350g quorn mince
4 cloves garlic crushed
1/2 tsp chilli flakes
1 courgette chopped into small strips
mushrooms chopped
handful of coriander chopped (don't overdo)
450g can chopped tomatoes
jar of passata
20 baby plum tomatoes halved sideways
2 heaped dessert spoons pickle (Branston or equivalent)
450g kidney beans
1 tbsp oil
Prep. Time → 20 min
Cook Time → 30 min
1. Fry onions until clear in the oil, add carrots and fry until coated in oil
2. Add courgettes and mushrooms and fry until soft
3. Add garlic, chilli flakes and mince - stir in for a few minutes
4. Add chopped tomatoes and passata - stir in for a few minutes
5. Add pickle and kidney beans - stir in for a few minutes
6. Add tomatoes and coriander
7. Simmer for at least half an hour, the longer left, the better the flavours mixed
