Vanilla-cinnamon ice cream

2 (14 ounce) cans fat-free sweetened condensed milk
1 quart fat-free half-and-half
1 tbsp vanilla extract
1 tsp ground cinnamon
Garnish: Cinnamon sticks

1. Stir together all ingredients, and pour into freezer container of a 1-gallon electric freezer. Freeze according to manufacturer's instructions. Serve immediately, or place in freezer.
Grilled Pineapple
1 fresh pineapple
3 tbsp brown sugar
1/2 tsp ground cinnamon
1 tbsp grated fresh ginger
Cut pineapple lengthwise into quarters; discard core. Remove pineapple pulp, discarding shell. Combine brown sugar and cinnamon. Sprinkle evenly over pineapple pulp. Sprinkle evenly with giner. Coat a food rack with cooking spray; place on grill over medium-high heat. Grill covered 5 to 7 minutes on each side.
