10 tomatoes
3 red peppers
2 cloves garlic
1 spanish onion
1 large potatoe
1 table spoon vegetable stock
basil

Prep. Time → 15 min

Cook Time → 30 min

1. wash and chop the tomatoes into quarters place in a oven tray then finely slice the garlic and add to the tomatoes and place in the oven for 10 minutes at 180degrees after place to one side to cool

2. next cut the top off the peppers and deseed then place peppers on a tray and into the oven at 180 degrees untill nearley burnt thn peel the side should peel off just useing ur hands thn chop into chunks

3. finely chop the onion and place in a saucepan with a bit of oil on a medium heat next peel and chop the potatoe and add to the onions thn add the stock and water to just cover the potatoes until potatoes are boiled thn add the tomatoes with the garlic and stock and the peppers and basil leavin some for garnish then take off the heat

4. next remove a little of the juices so its not too runney thn blend to a consistancy of ur liking addin more of the removed stock if necessary finally season and serve with basil place in center of bowl
