Texas grits souffle

6 cups very lightly salted water 1 1/2 cups grits 1 lb. grated cheddar cheese 1 1/2 sticks butter 3 whole eggs, beaten pinch of salt, white pepper, garlic powder dash of Tabasco

1. Bring water to boil. Add grits and cook, stirring until mixture is thick. Remove from heat and add cheese and butter. Stir until smooth and add eggs and spices. Mix well. Pour into an 11x14 inch oiled baking dish. Bake one hour in preheated 250 oven. Serve with salsa. Yield: 12 to 14 servings.
