Tejano pork barbecue tacos

Pork Tenderloin
3 Tbsp Paprika
3 Tbsp Celery Salt
2 Tbsp Dijon Mustard
2 tsp Cumin
1 tsp Black Pepper
1 tsp Onion Powder
1 tsp Ancho Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Cinnamon
1/2 tsp Cocoa
Chorizo, 12 oz
Bacon, 1/4 pound
Cotija Cheese, crumbled
Barbecue Sauce
Mexican Hot Sauce
Cilantro, chopped
Corn Tortillas
Prep. Time → 90 min
Cook Time → 660 min
1. Prepare pulled pork as consistent with Barbecue Pulled Pork recipe.
2. Saute chorizo in a frying pan until fully cooked.
3. Bake bacon in a cold oven set to 450 ºF, remove at temperature.
4. Chop bacon and mix with chorizo. Mix with the pulled pork in a ratio of 2 parts pork to 1 part chorizo/bacon.
5. To make tacos, warm the corn tortillas on a hot frying pan. Pile the pork mixture in the middle of the tortilla, and add crumbled cotija cheese. Drizzle barbecue sauce and Mexican Hot Sauce over the cheese, then top with chopped cilantro.
