Tajine of chicken with quince

1 chicken, Cut into 8 pieces
3 onions, chopped
3 Tbs olive oil
salt, to taste
pepper, to taste
1 tsp ginger, dried
pinch paprika
few parsley sprigs, chopped
few cilantro leaves, whole, chopped
1 cup chicken stock or water
2 quinces, seeded and sliced
2 Tbs butter

Prep. Time → 14 min

Cook Time → 60 min

1. 1. Brown chicken in Olive oil in a large oven proof casserole.

2. 2. Add onions, salt, pepper, paprika, ginger, parsley, cilantro and chicken stock or water.

3. 3. Cook gently for about 30 minutes. Longer for older birds.

4. 4. Sauté quinces in butter till golden brown all over.

5. 5. Add sauteed quinces to the casserole (or a tajine, an earthenware pot) and cook in oven for 30 more minutes at 350 F.

6. 6. Serve right from the pan with cous cous.

7. Tips
Can make one top of stove, but shorten cooking times to 40 minutes total.
