Sweet potato soufflé

4 C. sweet potatoes (cooked and peeled)
1 1/4 C. sugar
10 tbsp. butter
1 1/2 t. vanilla
3 eggs (separated)
3/4 C. milk

Topping
1/2 C. self-rising flour
1/2 C. butter
3/4 C. brown sugar
1 C. chopped pecans

1. Begin by mixing sweet potatoes, butter, sugar, milk, vanilla and eggs yolks. Use a mixer to beat the egg whites until they are stiff. Gently fold the egg whites into the sweet potato mixture and pour into a 3-4 quart casserole dish.

2. Topping:
Mix Brown sugar and flour in a bowl and cut cold butter into it. Tip: using a bowl that has been chilled will make this step easier. Once the consistency is crumbly, mix in the chopped pecans. Pour the topping evenly onto the sweet potato mixture and bake at 350 degrees for 30 to 45 minutes.
