Sweet potato pie

This recipe was given from someone that bakes Sweet Potato Pies for the Yamboree. 1 cup half and half milk 2 eggs 1/2 cup Parkay margarine, melted 1 cup sugar 1 tsp. vanilla 2 cups potatoes (that have been boiled, drained and mashed) 1/2 tsp. salt

1. Put in blender as listed – blending for 1 minute. This recipe will all go in 1 deep dish pie crust (unbaked) or will be enough for 2 regular unbaked pie crusts. Bake at 350 for 45 minutes or until done. *Cut potatoes up and boil before starting pie. Also, let pie crust warm up some before you cook pie. I flute crust and prick on sides with a small fork.
