Summer quinoa salad
Recipe by1/2 cup quinoa
1 cup chicken or vegetable broth
1 can black beans
1 cup corn
1 large tomato, chopped
1 cup chopped leek or red onion
3 Tbsp chopped cilantro
1 chopped avocado, if desired
DRESSING
1 Tbsp olive oil
1/4 tsp cumin
1/4 tsp salt
1/4 cup orange juice
1/2 tsp ground black pepper
1. Cook quinoa with broth for 15-20 minutes. Drain and set aside to cool.
Make dressing by whisking together olive oil, salt, cumin, orange juice and pepper.
In a separate bowl, combine quinoa, black beans, corn, tomato, leek/onion and cilantro.
Pour dressing over quinoa mixture and serve.
