2.25 Lbs. Ground Lamb (80-20)
1 Diced medium Onion
3/4 C chopped flat-leaf Parsley
1 Tbsp. ground Coriander
3/4 tsp. ground Cumin
1/2 tsp. ground Cinnamon
2 tsp. kosher salt
1.5 tsp. fresh ground black pepper
1/4 C Olive Oil
8 thick medium pita pockets

1. Fork mix all ingredients well and refrigerate for 1 hour (best after 5-8 hours). carefully spoon in equal amounts of filling and flatten by hand to evenly disperse filling. lightly oil non-stick grill or flat griddle surface and cook on medium low until fat starts to render out
