Smoky shrimp and chorizo bake

6 oz shrimp, peeled, deveined, tails off
2 links mexican chorizo
1/2 lb red potatoes, cubed
1/2 green beans trimmed
1 red bell pepper sliced
1 cup corn kernels
1/4 beer
4 tsp olive oil
1 tsp miced garlic
1 tsp smoky paprika
1/4 tsp salt
1/4 tsp pepper

Prep. Time → 15 min

Cook Time → 45 min

1. Preheat oven to 400 degrees.

2. Coat a 8x8 inch baking dish with non stick cooking spray.

3. Toss potatoes and green beans with olive oil and 1/8 tsp salt and pepper. Bake for 15 minutes.

4. Remove dish from oven stir to release browned bits. Add chorizo, return to oven and bake for 10 minutes.

5. Remove dish from oven and add beer, garlic, corn, bell pepper, and remaining salt and pepper. Return to oven and bake for 15 minutes.

6. Remove dish from oven and add shrimp and paprika. Return to oven and bake 10 minutes or until shrimp are pink and opaque.

7. Dish is meant to serve two but it is a very hearty dish with big portions that can easily serve four.
