Ingredients for 4 People
12 oz of cooked smoked haddock, flaked.
1lb of mashed potatoes.
3 tabiespoons of fresh parslry, chopped.
2 tablespoons of chives, snipped.
1 egg, beaten.
4 oz of fresh white breadcrumbs.
Corn oil, for deep- frying.
Prep. Time → 20 min min

Directions
1. Mix the fish, potatoes, parsley and chives.
Divide into 12 pieces and shap each piece into a ball.
Dip in beaten egg, then roll in the breadcrumbs.
2. Deep fry the fish cakes in the hot oil,in batches
of 4, 4-5 minutes until golden brown.
3. Drain on kitchen paper.
