Slow cooker pork tenderloin with apples and pumpkin
Recipe by2 lbs Pork tenderloin
1 small onion roughly chopped
1 small sugar pumpkin, peeled and chopped
2 apples, cored and roughly chopped
1 cup chicken broth
1/2 cup honey
1 tablespoon dijon mustard
1 tablespoon balsamic vinegar
salt
Garlic powder
Black pepper
Fresh herbs: thyme, sage, and rosemary chopped about 1 teaspoon of each or to liking.
1. In small bowl combine honey, Dijon mustard, and balsamic vinegar with fresh chopped herbs
2. Saute onions in olive oil until soft.
3. Dry rub pork tenderloin with garlic powder, salt and pepper. Sear tenderloin on all sides.
4. In crock pot put chopped pumpkin and sauteed onions on the bottom. Add seared pork and top with chopped apples. Pour 1 cup chicken broth into pot. Pour honey, mustard, and vinegar mix on top.
5. Cook on high for 5 hours or low for 8 hours.
6. serve over grilled radicchio.
